Left-Overs Need Not Be Boring

The other day I cooked a whole duck on the barbeque.  It was my first time cooking a whole bird.  I’ve done duck breasts countless times but this, this was a whole ‘nother thing!

Well, despite my having put an orange and garlic cloves, salt and pepper in the cavity, despite, rubbing the outside with Chinese Five Spice and a bit of oil , and despite rubbing in some butter, it was just okay.  The family enjoyed it but….

I wasn’t expecting the meat to look so brown (I must have over-cooked it).  It wasn’t overly dry but not overly moist either!  I took pictures of the preparation but forgot to take one of the cooked bird!  Jeez… was that a sign?

Anyway, I accompanied it with coconut rice – I simply replace half the water with coconut milk, and added a star anise and a few cardamom pods – and a side mixture of edamame and peas.  Deeelish!

Well, I wasn’t happy with the original dish but the leftovers created?  Oh yeah!

In a wok, I sautéed one onion and two ribs of celery plus a half of a red bell pepper that was hanging around in the fridge.  I added my leftover coconut rice (about 2 cups worth) and about 2 cups of shredded duck meat as well as my leftover pea mixture (about 1 cup).  Tossed them all together and voilà!  I didn’t even add any extra seasoning.

Don’t be afraid to put stuff together into a new creation.  It may not always work but most times, it will!

  1. Continue getting my own ducks in a row, Missy D! Just not on the grill…..
    In spite of it all….am definitely going to try the rice w/coconut milk and all the other add-ons!

    • It's funny, because a friend posted pictures of ducklings and mentioned getting ducks in a row!
      Do, it makes rice a little less blah! Here too… off and on between showers, thunder… crazy day! Can't make up its mind! xo
