A Christmas Brunch

I got my first catering contract since the end my office job.  Makes me feel legit and on the right track.

The client wanted a cold buffet-style brunch for 28 people with “the usual suspects”, i.e. sandwiches, salads, quiches, smoked salmon and a variety of breads (baguette, croissant, bagel).  Why does it always seem it will be a piece of cake until you realise you are a one-woman show (though hubby does the occasional errand, delivery and lots of dishes – a huge help and most appreciated!) and there is lots to do!

For the sandwiches, I made egg-salad and chicken-salad (bonus was I ended up with a nice chicken stock!)

As for the salads, good old-fashioned Maccaroni, Mediterranean Quinoa and Jamie Oliver’s Potato with Smoked Salmon and Horseradish Crème Fraîche (my favourite!)

This was accompanied by Ham & Cheese Quiches, Sun-Dried Tomato & Kale Frittata (can you believe I forgot to take a picture?), Smoked Salmon and Pâtés and Cold Cuts.

I also supplied them with orange juice and bubbles to make mimosas as well as the various breads.

We managed to deliver the lot on time and the client seemed pleased.  I’ll be calling to get a proper feedback. Fingers crossed they enjoyed it!
